Menu Monday





Last week was so crazy busy! I worked everyday but Tuesday.... I'm glad to be back to a regular week... Last weeks menu was light, and not even posted! LOL I didn't have time and the time I did have was spent with my peeps.... we had a lot of soup and sandwich's.... ever do that?? Its fast and easy... and cheaper than eating out....

This week I am better prepared... mentally prepared too...last week through me for a loop I tell ya... the weather is grey and cold... even lost power Saturday from about 1-6... whats up w/ that??

Monday: Spanish Meat loaf in the slow cooker. I work on Mondays, so this is made by 9 am and done by 5/6 o'clock. It will be served w/ veggies.

Tuesday: Chicken Florentine this is a great recipe! Make double and freeze half for another meal! Its great served w/ a nice salad and some warm bread or rolls. Nummy!

Wednesday: I work on Wednesdays so this is another easy night. Left over from the previous nights so far. We always have them... left over I mean...

Thursday: Emily's Tortilla soup

Friday: Pizza!! BBQ Chicken and Cheese! The faves...

Saturday: Grilled Turkey burgers, sweet potato fries and mixed vegetables.

Sunday: Crock pot Garlic Chicken


I'm making to loves of banana bread. 1 for the family, 1 for my meeting on Monday night. Breakfasts will be yogurt, fruit, eggs, Morning Star sausage patties ( these are pretty good!!) smoothies and oatmeal... and not in one sitting *Ü*

Howdy!

I tried making the Spanish meatloaf and it didn't turn out so hot. I told Greg you really liked this recipe and that is why I made it. He said it must be a cruel joke you're playing on me because mine turn out pretty bad. I couldn't eat it w/o thinking of canned dog food. :) Yup, that bad...

I was hoping you could share a picture of what it is suppose to look like. Maybe it will encourage me to try it again. :)

LOL! That’s too funny! I’m sorry... but its funny... not sure what to say... its meatloaf?? How can you make it bad?? LOL

We add sour cream... salsa, avocados as toppings....

Good thing I wasn’t drinking coffee when I read this... I would have shot it out my nose from laughing so hard....
