Recipie number 1. I found on the WTM forums! I do not know who Emily is, but she gets all the credit... so here is to Emily on the WTM Forum!
Emily's Tortilla soup
- 28-32 oz of chicken broth
- 2 cans refried beans
- 2 cans black beans drained
- 2 cups cooked chicken (optional)
- 1 can of corn
- 2 cups salsa
- 1 cup water
Mix all in a pot and simmer 10-15 minutes. Turn off heat and add 2 cups shredded cheddar.
Place crumbled tortilla chips in bottom of soup bowls, spoon soup into bowls and garnish with a dollop of sour cream and avocado if you desire. Sky is the limit here.
Garden salad on the side.
Its a fast easy meal! It has become a weekly meal and we all love it!
Recipe number 2
Easy Peanut Butter cookies
- 1 cup peanut butter
- 1 egg
- 1/2 cup sugar
- dash of vanilla
Mix all ingredients well. Drop onto cookie sheet by teaspoon fulls. Dip fork in water and make traditional cross marks and bake for 15-20 minutes, depends if you like crunchy cookies.
